With very young children, animals and museums where they can touch things usually work best. Later on you can try a short visit to an art museum, with a clear goal.

With kids in Valencia
The Museu de les Ciències is interactive and the Oceanogràfic is in the same complex, so you can do both in one long day. Look at the joint ticket before buying separately. Bioparc is a separate visit, and its prices change with the time of year.
With kids in Málaga
The Museo Picasso doesn't charge under-17s, though the adult pays except in the last two hours on Sundays. The Alcazaba doesn't charge under-6s. For animals, Bioparc Fuengirola has a child rate for ages 3 to 9, so from age 10 you pay the general price.
With kids in Madrid
The Prado is free for under-18s and works best with two or three chosen paintings. If they'd rather play, the Museum of Illusions has a child ticket for ages 4 to 12, from €12. If you're staying several days, Zoo Aquarium and Faunia sell a joint pack.
With kids in Barcelona
CosmoCaixa is the clearest choice: under-16s don't pay and an adult costs €8. The Museu Blau, with the same age limit, makes a good second visit. For running around outdoors, try Poble Espanyol.
